There were three books i was interested in:
The Bread and Butter project by Allam and McGuinness (which I bought; not available from Amazon)
The Natural Tucker Bread book (available from Amazon)
Sourdough companion by John Downes (not on Amazon but link to Johns’ web site: http://sourdough.com/bakery/john-downes)
I have not had time to read much of the Bread and Butter book but it does have some great recipes particularly for sourdough. Most of the loaves can be made by hand or in a mixer and there are instructions/advice for both options. There is plenty of basic advice and a good story about how the company started the Bourke Street Bakery in Sydney, a social enterprise providing training for people and communities in need. Only regret I didn’t buy the book earlier so I could have visited one of their bakeries! Thoroughly recommended.
